 Winemaking

In the barrelsThe process of winemaking is one requiring patience and skill. The ingredients for a great wine go  well beyond simply the grape.  The type of soil, the slope and climate are all elements that contribute to the final taste.

In the Sulky area, there is a long, cool ripening season.  This gives the vines every chance to draw the maximum nutrients required for good wines.  

Netting is used to keep the birds away during the ripening time.Nets are used for protection from birds.  White wines are harvested around Anzac Day (April 24) with the reds a few weeks later.  

 

Lab work is also important to get it right.Dulcinea is a small winery based on flexibility with much movement of barrels, bins, fermentation vats and storage tanks during both vintage and maturation. The winery is also used by other vineyards which have their small parcels of fruit turned into wines which they in turn sell.
