Light Autumnal Meal
Smoked Trout with Cucumber * Serves 4
* Prep'n time 15 minutes
Ingredients:
200 grams light sour cream
2 tblspns capers
2 tblspns dill or other fresh
herb, chopped
2 tblspns chives,
chopped
2 Turkish bread squares (15x15cm)
3 cucumbers, thinly sliced
2 or 3 Smoked trout (available from Tuki Trout Farm @ Smeaton)
Method:
1.
Remove the bones from the smoked trout (leave in pieces as much as
possible)
and set aside
2.
Combine sour cream, capers, dill and chives
3.
Cut the bread in half and toast lightly then top with sour cream
4. Top each with the cucumber and boned smoked trout serve with a
glass of
