Sauvignon Blanc 2006

This wine is made from grapes grown in the Ballarat and Western regions of Victoria. It has a light green hue and a herbaceous bouquet, followed by sweet gooseberry flavours on the middle palate and a subtle honeyed finish. Oysters and shellfish would be a tasty accompaniment to this wine. [Top]



Chardonnay 2006

Made of Ballarat fruit exclusively, this wine has a strong melon bouquet. It is an elegant fruit driven wine with lemon/lime flavours in the middle and a pleasant sweet finish with no oak influence. This wine will complement fish or chicken dishes.[Top]


Cabernet Sauvignon 2003

This ruby coloured wine was matured in French oak for 18 months. It has a cigar box bouquet and delicate berry and violet flavours on the middle palate and finishes with a toasted, smokiness. Soft cheeses and game meat would complement this wine. Top]



Shiraz 2003

The fruit for this wine came from the Grampians, Edenhope and Murtoa in Western Victoria and it was matured for 18 months in American Oak. It has a spicy, nutmeg bouquet and subtle chocolate flavours in the middle. Serve it with seared beef fillet or porterhouse!!! [Top]




Pinot Noir 2002

This variety grows extremely well in this climate and has classic Pinot characteristics. It was matured in French oak for 1 year and is a full-bodied wine with cherry wood flavours. It is a drink with subtle flavour to be savoured slowly with venison or other game. [Top]


Merlot 2003

We usually blend this Merlot with our Cabernet Sauvignon but we decided to bottle this wine as a straight varietal as well. It is rich in colour, has a complex palate, high alcohol content and a nose of violets and dark berry flavours. It will enhance the flavour of any red meat of your choice and cellar for 5-7 years.



Sparkling Chardonnay (Non-Vintage)

This wine has spent 3 years on lees and gives off yeasty characteristics on the nose, it retains a steady stream of beads in the glass and has a fruity explosive flavour on the palate. A lovely aperitif with warm smoked trout and fingers of toast or as a compliment, to steamed asparagus with hollandaise sauce. [Top]



Sparkling Shiraz 2001


Made in the Methode Champonois style, this deep red shiraz has a rich spicy finish to it. Serve it as an aperitif or match it to a course during a meal. It will delight! [Top]

 


Frontignan 2004

Grapes grown in Northern Victoria are sourced for this sweet fruit salad flavoured wine which enhances the flavours of Asian food. Or, for something different, serve it with an apple tart and clotted cream.[Top]

 

 



Pink Chardonnay 'Seduction'(Non-Vintage)

Made from Chardonnay juice and fermented on Shiraz skins for 24 hours, 'Seduction' has a cherry, almond taste. It is a low alcohol wine of adventure with much of sweetness retained. A wine for a light lunch or late afternoon nibbles. [Top]

 



 Dulcīnea Tawny Port 375ml

A nutty tawny, great at the end of the evening with chocolates and coffee.
